Chicken Picatta

Last night i made Chicken Picatta with my mom who is up visiting because my sister is having back surgery.  We decided that for our Sunday dinner we would make chicken picatta because it is a easy delicious meal!  The ingredients needed are chicken, salt and pepper, minced garlic, lemon, butter, capers and olive oil.  The first thing you do is use a mallet to flatten the chicken on wax paper.  Cut the chicken breasts in half so they are thinner.  Next lightly season the chicken with salt, pepper, and  minced garlic.  In a large skillet or pan, melt 2 tablespoons of butter with 3 tablespoons olive oil.  Then add the chicken and let it cook for 3-5 minutes on each side or until light brown.  If more butter and oil is needed, go ahead and add it.  Once all the chicken is done cooking, add 2 more tablespoons of butter, 3 tablespoons of oil, cut the lemon in half and squeeze lemon into the butter and oil and add capers.  Bring this to a boil then put the chicken into it.  The chicken is done and leave in the oven on warmer to keep it warm.  Next is the noodles.Boil water and add spaghetti noodles to the boiling water.  Stir a few times and boil until soft.  Add some lemon and butter to the noodles.  Lastly, we had asparagus.  I broiled it in the oven.  I put it on a cookie sheet drizzled some olive oil on them and added lemon pepper and a little bit of garlic powder.  Put in the oven and broil for 5-7 minutes.  This whole meal took about 40 minutes to eat.  It is very simple and very delicious!
